Sammy's twist on mash potatoes

Post  sammyantha on Mon Apr 18, 2011 11:27 am

ok so i have 2 ways to make mash potatoes that myself and my partner absolutely love.

This is really easy to make, as well all mashed potato is lol but i just add a couple of things different to make it stand out.

Mash potato version 1

5 large potatoes (Sebago are the best) will feed a family of 4 easily.
1 tbsp butter or margarine
1/3 cup milk
2-3 tbsp craft cream cheese spread

1) Peel potatoes and cut into large chunks. Cook in a large saucepan of boiling salted water for 20 minutes or until very tender but not falling apart.

2) Drain potatoes well. Return to saucepan over low heat. Shake pan gently until any remaining water evaporates. Using a potato masher, roughly mash potatoes.

3) Add butter and hot milk to potatoes. Beat with a wooden spoon until fluffy then stir in cream cheese spread.

4) Serve topped with extra butter and salt and pepper.

Notes
To heat milk, pour into a microwave-safe jug or cup. Heat, uncovered, for 1 to 2 minutes on HIGH (100%) power or until hot.

Mashed potato version 2

5 large potatoes (Sebago are the best) will feed a family of 4 easily.
1 tbsp butter or margarine
1/3 cup milk
2 eggs even 3 if you like the taste of eggs

At step 3 add the 2 eggs then over a low heat beat with a wooden spoon until mixture is cooked into potato mash.

My partner loves this version the best.

If you haven't tried mashed potatoes this way give it a try Very Happy kids will love it
