Spicy Roasted Chickpea Salad. -  Empty Spicy Roasted Chickpea Salad. -

Inspired by my Twitter friend 'Ganga108'. who posted a recipe for spicy chickpeas. Which can be great as a snack on its own, or added as an accompanient to variouse food bases, soups, salads, curries, etc.

Easy to make, and so yummy and moreish they may not make it to the plate before you have eaten them straight from the oven.

To make chickpeas;

1 x tin of chickpeas ( drained, rinsed well, and patted dry )
a mixture of spices.. i used, 1 tsp sweet paprika, ground cumin, ground corrianda, 1/4 tsp black pepper, salt, currie powder and tumeric. ( of course if you want them to have some kick add a little chilli powder.)
1 tbl spoon of olive oil.

Preheat oven to approx 200c.
mix together ingredients to coat chickpeas.
roast in shallow oven dish for about 20 to 30minutes.

Chickpeas should be crunchy on the outside and buttery inside.


To make salad.

1 good handfull of mixed lettuce
6/8 snowpeas (top and string removed.)
1 x tomato sliced into wedges
1/4 red capsicum finely sliced
dash of white wine balsamic vinegar
spring onion to garnish.

wash salad ingredients, mix together and add dressing, top with a generouse amount of chickpeas.

enjoy.

what makes this salad extra tasty, is the spices from the roasted chickpeas infuses into the dressing that coats your salad.
