Re: ANYONE KNOW OF AN AWESOME FRIED RICE RECIPE??
Well I'll give it a try, Sammy. My son works in a noodle bar so he'd probably tell you different but here goes. I make it up from my head so it does differ too & I don't really have a recipe.
I normally cook about 3 raw cups of long grain rice in my rice cooker, using the cup provided. I then add 3 cups of water, 2 teaspoons of chicken stock powder & about a tablespoon of butter or margarine to the rice to cook it.
Then I spray a frying pan with cooking spray & then add a couple of teaspoons of garlic & place it on the cook top, of the stove. Then I cook about 2 rashers of sliced bacon. I push it to one side of the pan & then cook 2 beaten eggs & break them into small pieces as I go. Then I add a can of Chinese veges (Trident) & then a small can of bean shoots (Trident). You can use fresh one's too but even bean shoots are hard for me to get here. Then I add the rice. Last week I made it with some left over king prawns cut into pieces but I've used tin prawns before too. Also last week I put in some chopped chicken thigh fillet that I had marinated in honey, soy & garlic marinade (bottle) & cooked off. Then add 1 cup of veges, I use frozen peas, carrot & corn. Then I normally would pour in some of the Honey, Soy & Garlic marinade into it. Stir it through & this gives it flavor & helps to lift everything off the bottom. I then add a sprinkle of pepper & Seasonal All before serving it. You can also add Chinese sausage if you like. Chopped mushrooms & chopped onion or spring onion too if you like but my hubby doesn't like them, so I don't. You can add parsley too for color.
My Irish Mother In Law also makes what SHE calls fried rice. Just cooked rice, cooked bacon pieces, onion & celery with chopped up raw tomato & seasoned with pepper & Worcestershire sauce. All combined in a bowl & microwaved just to heat it through. Very tasty!
